Chocolate Panna Cotta


We don't usually make a big deal of Valentines's day but we do acknowledge it in small ways. A gift of something sweet and/or a nice dinner at home.  I love chocolate everything so I decided on chocolate panna cotta since we had cream waiting in the refrigerator waiting to be used.  Remember that good quality baking chocolate will make it all the better.  I prefer dark to milk chocolate but it's your choice.

Chocolate Panna Cotta
Serves 4-6 (depending on mould size)

2 Tbsp water
2 tsp gelatin
2 cups cream (I used 35% whipping cream but you can use less fat cream)
100g dark chocolate, chopped
1/3 cup icing sugar, sifted
Garnish optional: berries

Mix together water and gelatin and set aside.

In a saucepan, over medium heat, bring cream, chocolate and icing sugar to a boil, mixing frequently.  Add gelatin mixture, stir and simmer for 2 more minutes.

Remove from heat and strain mixture into lightly greased moulds.  Place into refrigerator for 4 hours or until set.

Unmould and serve. Garnish with fresh berries if you would like.
